Salmon Mint Kebabs

Here is a great summer alternative to traditional grilled salmon.  These kebabs are fruity, fresh and saucy all at the same time.  Great for Al Fresco Dining or even a summer's dinner party.  Suitable for 2 foodie lovers. Here we go ...

Salmon Mint Kebabs
400g fresh salmon, skin on (similar thickness if possible)
3 Tbsp mint jelly (store bought)
1/2 tsp salt
1/4 tsp pepper
1/4 smoked paprika
Red bell pepper
2 rings fresh pineapple
4 wooden skewer sticks
2 Tbsp sesame seeds, toasted
1 Tbsp fresh mint finely chopped

Preheat oven to 180'C
Cut salmon into 1 inch x 1 inch size square cubes
Add salmon, mint jelly, salt, pepper and paprika to a bowl and stir well
Allow to marinade for at lease 1 hour, stirring occasionally
Cut pepper into inch cubes, add to a bowl and microwave for 1 min
Clean pineapple and cut into inch thick cubes
Add pineapple chunk, salmon cube and pepper to a skewer (do not soak skewer)
Repeat pineapple, salmon and pepper another 2 times
Repeat process until all 4 skewers are dressed (3 pieces salmon on each)
Heat a grilled pan on high
Add some olive oil and brown each side of the square salmon cube for 30 seconds only
Place pan in the oven and cook for 5 min only
Remove and allow to stand for another 2 min
Sprinkle with sesame seeds and chopped mint

Chicken Coronation Summer Salad

This is a perfect weekend salad as a main dish on a lovely sunny day.  It is also low calorie and has good layers of flavours and very filling with the chicken and almonds.

Chicken Coronation Summer Salad
100g light mayonnaise
100g Greek yoghurt
50ml cup dry white wine
1 tsp Piri Piri
1/2 tsp salt
1/4 tsp pepper
Salt & pepper to taste
2 chicken breasts
1 clove garlic, peeled
2 sprigs fresh thyme
1/2 cup celery stalks, chopped
2 tbsp spring onion, chopped
1/4 cup raisins, soaked in warm water
1/2 cup salted almonds, roasted


For the dressing mix mayonnaise, yoghurt, wine, pipi piri, salt and pepper and set aside
Season chicken breasts with lots of salt and pepper
Place side by side on some foil which has been lightly greased
Add garlic and thyme between the breasts
Close foil to make a parcel and bake for 30 min at 180'C
Cut into bite size cubes.
Add celery, spring onions and raisins to chicken
Add dressing and toss
Add salad greens to a plate, place chicken on top and sprinkle with warm almonds

Footnote: This recipe is even better if you rest the chicken in the dressing overnight.

Marshmallow Rice Crispy Squares

If you are a mom, you will know that these are kid's favourites.  Well you don't have to be a kid to enjoy them, especially when add a few 'adult' ingredients.  Makes 12 large squares, here we go ...

Marshmallow Rice Crispy Squares0
45g butter
300g marshmallows (white and pink)
1/4 tsp cinnamon
1/4 tsp espresso granules
180g Rice Crispy's

Melt butter on LOW in a pot
Add marshmallows  and keep stirring until they have melted
Add cinnamon and espresso and stir well
Add Rice Crispy's and mix with a wooden spoon
Transfer to a well greased 32cm x 23cm dish
Using a back of a spoon spread out and flatten
Allow to cool before turning out and cutting into squares

Turkey Stuffed Potatoes

So here is a really easy whip-me-up healthy Friday dinner with all the protein and carbs. you need.  I am home alone, so really perfect when you need to cook for one.  Makes 2 portions. Here we go ...

Turkey Stuffed Potato
2 big potatoes
350g turkey fillets
1/4 red pepper, large dice
1/4 yellow pepper, large dice
1/4 green pepper, large dice
1/2 red onion, chopped
1 clove garlic, finely chopped
1 Tbsp wholegrain mustard
1/2 cup light cream

Pre-heat oven to 180'C (370'F)
Wash potatoes, DRY and bake for 1 hour directly on the oven rack, turning once over
Meanwhile, chop turkey fillets into slithers and mix with your favourite spices
Add a little oil to a frying pan, heat and toss turkey until golden brown
Add all other ingredients and stir well
Adjust heat to a low temperature, lid on and cook for about 10 min until peppers are tender
Remove potato from the oven
Slit open and add a dollop of butter (herb or garlic butter also works well)
Load with filling and garnish

This is really wholesome and healthy as well!

Potato Square Puffs
Another great sunny weekend and time to put a flame to the BBQ.  I am a cheese addict, so when I found this recipe, it went on the TO-COOK list immediately. These delish little potato sides work well next to some grilled chicken and crunchy green salad. 

3 cups cooked, mashed potatoes
2 eggs
1/3 cup sour cream
1 heaping cup cheddar cheese, grated
2 Tbsp Parmesan, grated
2 Tbsp garlic chives, finely chopped
Salt and black pepper to taste

Preheat oven to 200 'C 
Lightly grease a 9 well (square or round) muffin pan
In a bowl whisk eggs then mix in the sour cream
Stir in both cheeses and the chives
Add potatoes and mix well 
Spoon mix into pan filling cups slightly below the top 
Bake 25- 35 minutes until they pull away from the sides and are brown
Remove from oven, cool for 5 min before serving


Garnish with some extra sour cream
